Ingredients:
Olive oil-2 tablespoon
Red bell pepper-2 (chopped)
Eggplant-1 (chopped)
Zucchini-1 (chopped)
Walnuts-1/2 cup (chopped)
Canned tomatoes and green chilies-8 ounces (chopped)
Taco seasoning-2 tablespoon
Water-1/4 cup
Directions:
1. Warm up the oil in a pan over medium-high heat.
2. Add bell pepper, eggplant and zucchini, stir and cook for 5 minutes.
3. Combine the tomatoes and taco seasoning.
4. Stir and cook for 10 minutes more.
5. Pour the water, toss everything, cover and cook for 10 minutes more.
6. Divide into bowls. Serve for lunch.
